Tomato Gallette

by Marta Greber

You'll need

  • 250g flour
  • 110g butter
  • 1 tsp salt
  • 1 egg
  • 3 tbsp water
  • 500g cherry tomatoes
  • 1 tbsp fresh thyme
  • 2 tsp brown sugar
  • 1 tbsp olive oil
  • 50g cream cheese
  • 50g parmesan
  • pinch of black pepper and salt
  • pine nuts, roasted

Here's how

  1. Start with a dough. Place flour in a bowl and add cold butter cut in cubes. Rub it with fingers. Add salt, egg, water and knead, so all the ingredients combine. Form a bowl, wrap it in a plastic foil and place in a fridge for 30 minutes or so.
  2. In a small bowl combine cream cheese, parmesan and pepper.
  3. Heat a frying pan over a medium heat, add oil and tomatoes. Sprinkle with sugar, thyme and fry until tomatoes get soft (few minutes).
  4. Divide dough in two parts and roll into a round shape (about 25 cm wide). Spread a cheese mix equally on both doughs (leave few centimetres on sides) and divide tomatoes. Fold the dough on sides so it holds tomatoes inside.
  5. Bake for 30 min in 200*C.
  6. Fry fine nuts on a pan and spread over a ready galette.

I love to eat breakfast in the morning and it has to be a quality time. I also think that it's the most important meal of a day. It's so much nicer to start a day early in the morning and spend some time with people you love or with a good magazine and some music. So, let's breakfast!
