Eggs Friend with Tomatoes and Goat Cheese

Recipe is easy to prepare and will be a nice replacement for fried eggs. Plus it looks so nice on a pan, so colourful. Set up your morning table and enjoy, meantime I’ll go to kiss my daughter.

You'll need

  • 2 tbsp oil
  • 1/2 onion, shredded
  • 1/2 red capsicum, shredded
  • 1 garlic clove, shredded
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 tbsp fresh coriander, shredded
  • pinch of salt and pepper
  • 1 tsp tomato paste
  • 16 cherry tomatoes
  • few slices goat cheese
  • 4 eggs
  • baguette

Here's how

  1. Heat a frying pan with 2 tbsp of oil and add onion, capsicum, garlic, spices and tomato paste.
  2. Heat it for few minute and add cut tomatoes. Cover with a lid and cook for about 15 minutes.
  3. After this time add few slices of goat cheese, break in 4 eggs, cover with a lid and fry for about 3-4 minutes, so egg white is cut.
  4. Serve with fresh coriander and baguette.
