Buckwheat Banana Bread

Pregnant woman doesn’t understand what mothers mean by repeating constantly “you should sleep and enjoy your free time as much as possible” till she’s a mother and it’s too late. Not complaining here, Mia is a sweet little girl, but waking up each 3 hours to feed her isn’t something I’m used to (yet). Days pass and I can’t imagine my life without her. She’s the sweetest little girl with beautiful eyes, few hair and a killer smile. Today I showed her a drawing of panda and she made the most surprised expression ever (born to be a star). Yes this is what occupies me lately - learning my daughter millimetre by millimetre. But I manage to do other things as well - I’ve started a hat and most probably will finish it next year, the same with this super interesting book I’m reading. But what I’ve managed to finish was banana bread. It’s buckwheat and tastes awesome! I baked it at night when Mia was sleeping and in the morning just aded cream cheese, fruits and a rice syrup. It is awesome like it. You can fry it on a bit of butter or coconut oil - wow! Banana bread is most probably the easiest cake ever and you can make a healthier version of it, so why not. Taking pictures was so fast that I have no idea how and when I made them. And the whole styling was a mess on my table, literally. But it’s still working for me. Blogging is fun.

You'll need

  • 4 smashed bananas
  • 140g melted butter or coconut oil
  • 1/3 cup rice syrup
  • 1 & 1/2 cup buckwheat flour
  • 1 egg, lightly beaten
  • 1 tsp baking soda
  • pinch of salt
  • cream cheese
  • fruits
  • rice syrup

Here's how

  1. Mix all the ingredients in a bowl. Grease baking form with butter or coconut oil and heat your oven to 175*C. Place dough in a form and bake for about 45 minutes - 1 hour.
  2. Serve with cream cheese, fruits and rice syrup.
