It doesn’t need to be December to make these ginger treats, sweet and spice is combined to make these delicious biscuits.
2 cups plain flour
2 tps ground ginger
1 tsp bicarbonate of soda
100g butter, unsalted and softened
3 tbsp golden syrup
¾ cup brown sugar
½ cup of icing, white
½ cup smarties
Preheat oven to 180 degrees.
Sift the flour, bicarbonate and ginger into a bowl. Rub the butter into the flour to make breadcrumbs. Stir in the sugar.
In another bowl whisk the golden syrup and egg together. Pour this into the flour mixture and stir to combine.
Kneed the mixture in the bowl to make a smooth dough.
Place the dough on a floured surface and using a rolling pin, roll out to a ½ cm thickness. Use a gingerbread cutter to make the biscuits and place them on a oven tray lined with baking paper. Continue this process till you have used all the dough.
Place in the oven for 15 minutes, allow to cool and decorate.
To decorate the biscuits, you can use smarties, icing, licorice, currants, icing sugar. Get creative!
