Onion and Roast Pumpkin Soup

Roasted Butternut Squash Bisque with Almonds is a fragrant, creamy and delicately flavored soup.

You'll need

  • basic vegetable stock
  • 1/2 butternut pumpkin
  • 4 brown onion
  • 1 clove of garlic
  • 5g ginger
  • 1 tbsp extra virgin olive oil
  • 1.5L vegetable stock
  • 3 tbsp white miso paste
  • 1 tbsp cream
  • 1 tbsp butter
  • pinch of salt and pepper
  • 1 slice of sour dough bread
  • 1 tbsp continental parsley
  • pinch of salt and pepper
  • 2L water
  • 1 carrots
  • 1 brown onion
  • 1 leek
  • 2 tomato
  • 5 swiss brown mushroom
  • 1 piece Thyme
  • 1 bay Leaf
  • 1 tsp black peppercorn

Here's how

  1. Cut all vegetables into small chunks of a similar size. Add vegetables into a pot of water sitting over a high heat. Bring to pot to the boil. Skim the surface of the water to remove the scum that has risen. Reduce heat and simmer for 30 minutes. Pass the stock through a sieve to remove all vegetable pieces.
  2. Remove the pumpkin skin and Cut the flesh into 7cm chunks. Place pumpkin on a roasting pan and place in a 200degree oven until soft. Heat olive oil in a heavy based pot and caramelise the garlic, onion and ginger. Add roasted pumpkin and stock to the onion, garlic and ginger. Simmer for 30 minutes.
  3. Using a mixer or a stick blender puree the contents of the pot. Pass the liquid through a sieve to ensure a smooth consistency and add the rest of the ingredients. Season to taste.
  4. Preheat your oven to 150 degrees. Dice bread into small 2cm cubes, spread on a baking tray and sprinkle with olive oil. Bake until dry and golden. Chop parsley extremely fine and pat dry on a paper towel. Toss toast with parsley, salt and pepper to ensure even coverage.
