Chuck in Whey

You'll need

  • 2tbs of ground pepper
  • 1 handful of Thyme stems
  • 4 bay leaves
  • 1lt of whey or milk (Whey will be the bi-product of the ricotta if you are making the baked ricotta too!)
  • 1kg of chuck steak

Here's how

  1. Preheat oven to 110 degrees
  2. Rub the steak thoroughly with pepper and place into a heavy based pot.
  3. Add the whey, bay leaves and thyme stems ensuring an even covering.
  4. Cover and cook for 6 hours or until the beef is soft and falling apart.
  5. To serve, remove the beef from the whey, pull apart and plate generously.
