Toast, Crab, Mascarpone

You'll need

  • 4 slices thick cut bread
  • 1 teaspoon fish sauce
  • 1 lemon, Juice and zest
  • 1 tablespoon white soy sauce
  • 1 bunch chervil
  • 1 bunch chives
  • 200g masacarpone
  • 200g cooked spanner crab meat

Here's how

  1. Drain any excess juice from the crab meat and pick through it to ensure there are no shells.
  2. Mix the crab and the mascarpone together. Add the finely chopped chives and zest of the lemon. Season the mix with the lemon juice, white soy and fish sauce. Taste as you go, you may not need the whole amount of each ingredient.
  3. Toast the bread until nice and golden. Top the toast with the crab mix and garnish with the picked chervil.
