by Matthew James Woodward

A classic. Nothing else to say.

You'll need

  • 200gm smoked salmon, preservative free
  • 2 tablespoons of capers, chopped
  • 1 spanish onion, sliced with a mandolin
  • 15 ml olive oil
  • 1 bagel
  • 100gm of good quality cream cheese
  • 1 bunch of dill

Here's how

  1. Finish with dill and a drizzle of good quality, cold pressed, extra virgin olive oil.
  2. Sprinkler over chopped capers, and place slivers of spanish onion evenly around the salmon.
  3. Spread a thick layer of cream cheese on the open side of the bagel. Lay slices of salmon over the cream cheese.
  4. Take your bagel, cut it in half, butter it and place it under a hot grill to colour it. Once its golden remove and place on a plate.
