Lamb Scrumpets

Scrumpets are incredible. Super delicious, crispy, great with mayo or ketchup and a beer. A real summer snack.

You'll need

  • leftover slow cooked lamb leg or shoulder, pulled into generous chunks
  • 200gm panko bread crumbs
  • 50gm butter
  • 1 egg
  • pinch pepper
  • pinch Salt
  • 1 lemon to serve
  • 1 cup of flour
  • 8 sprigs of thyme

Here's how

  1. Sit the fried lamb on paper towel to catch any runoff butter. To serve, slice some lemon into wedges, plate on brown paper, sprinkle with thyme leaves and accompany with sauces of your choosing!
  2. Once all the lamb is covered, place them in the pan to shallow fry, turning each piece when golden.
  3. Take your lamb pieces, coat them in flour, dip them in egg, and cover them in the panko and thyme mixture.
  4. Melt an entire stick of butter in a pan. Meanwhile remove the leaves off 5 sprigs of thyme and mix the leaves with a packet of panko bread crumbs.
