Weird Salad

A salad should be a bit weird and fun. Fill it with whatever you think would make you and your guests happy and hungry for more. I wanted this salad to be a bit fruity and earthy to create a contrast to my salty pizza and smoky fish.

You'll need

  • What goes in there:
  • 2 pears
  • 2 blood plums
  • 1 yellow peach
  • 1 white peach
  • 1 big Beetroot
  • 1 purple kohlrabi
  • toasted flaked almonds
  • rocket
  • spinach

Here's how

  1. Process:
  2. Peel and cut the beetroot. Season with salt and drizzle some olive oil on it.
  3. Roast it in the oven until the inside is tender and the outside crispy.
  4. Peel the pears and cut them into dices.
  5. Poach the pears in some water and left over white wine.
  6. Cut the peaches into thin wedges.
  7. Cut the plums as you would like them.
  8. Slice the kohlrabi thinly.
  9. Mix all the ingredients together in a big serving bowl. Make sure you mix all the components just before serving so the salad stays crispy for serving. Drizzle some good quality olive oil over it, and maybe some nice balsamic if you’ve got some.
