Potato and Rosemary Pizza

This pizza. You will love it.




You'll need

  • For the dough:
  • 820g Flour
  • 12g instant yeast
  • 1 teaspoon Salt
  • 1 teaspoon caster sugar
  • 2 tablespoon olive oil
  • 500ml tepid water - tepid water; mix two parts of cold water to one part boiling water
  • For the topping:
  • 6-8 new potatoes
  • One handful of fresh Rosemary
  • 4-6 cloves of garlic
  • 1-2 cup parmesan
  • salt and pepper
  • olive oil

Here's how

  1. Make the dough:
  2. Pour 1 cup of warm water over the yeast and sugar.
  3. Mix it until dissolved and set aside for a couple of minutes.
  4. Add the rest of the warm water and the oil.
  5. Stir in the flour little by little until the dough has the right consistency. The dough should feel smooth and release off the bowl.
  6. Cover the bowl with a tea towel and set to rest until the dough has doubled its size (about 30minutes). While the dough is resting make the topping.
  7. Make the pizza topping:
  8. Chop the garlic finely.
  9. Spread salt over the chopped garlic.
  10. Crush the garlic and salt into a mash with the back of your knife or in a mortar and pestle.
  11. Chop the potatoes into thin slices.
  12. Chop the rosemary.
  13. Grate your Parmesan.
  14. Put it together:
  15. When the dough has raised, split it in two and put it on two trays covered with baking paper.
  16. Spread the dough on the two trays in your preferred pizza shape.
  17. Spread the garlic mash out evenly on the two pizzas.
  18. . Drizzle olive oil on top of the garlic.
  19. Cover your pizzas with potato in one layer.
  20. Add your chopped rosemary and grated Parmesan on top of the potato.
  21. Bake in oven 225F for 15-20 minutes. The pizzas should come out with a crispy bottom and a golden layer of potato and Parmesan.
