Mango Caprese Salad with Cucumber and Sweet Chili Sauce

I love Italian food! It's my absolute favorite! But I also love experimenting in the kitchen, so I put a little twist on a traditional caprese salad. You can serve it as a dinner side, or as a light lunch with some good crusty bread. I hope you enjoy it!:)

You'll need

  • 2 medium tomatoes, sliced
  • 8 cherry tomatoes
  • 1 small mango, peeled, pitted and chopped
  • 1 small cucumber, very thinly sliced
  • 200g fresh mozarella cheese
  • 1 cup fresh basil leaves
  • 4 tbsp olive oil
  • 3 tbsp sweet chili sauce
  • 3 tbsp lime juice, freshly squeezed
  • 1 small garlic clove, finely minced
  • 1 tsp fresh coriander leaves, finely minced
  • sea salt
  • freshly cracked pepper

Here's how

  1. For dressing: In a small bowl, mix the olive oil with the sweet chili sauce and lime juice. Add garlic and coriander leaves, mix all ingredients until thoroughly combined.
  2. On a large platter arrange sliced tomatoes, cucumber, mango, cherry tomatoes and basil leaves.
  3. Tear up the mozzarella cheese and place it over the salad.
  4. Finally, season well with salt and freshly cracked pepper and drizzle with dressing.
