Snacks with Red Beet & Cheese

Beets are an important source of betalain. It's high in antioxidants, it's anti-inflammatory and has detoxification properties. This recipe is so easy and practical and it's a great way to consume raw beet. Beet and yoghourt have a great harmony together. The "pink cheese" that's created when you combine these two ingredients is delicious.




You'll need

  • whole-grain bread or whole-wheat bread
  • goat chesse, curd cheese or feta cheese
  • strained yoghourt
  • 1 red beet
  • some purslane

Here's how

  1. Slice the bread.
  2. Spread yoghourt on bread slices.
  3. Slice the beet and put beet slices on bread slices with yoghourt.
  4. Cut 2 of the beet slices into small pieces and knead them with cheese to create the pink color and a delicious taste.
  5. Put the pink cheese on the beet slices of bread.
  6. Serve them with some fresh purslane.
