This sinh to bo (vietnamese avocado shake) really hits the spot. It's cooling, creamy, yummy - especially this variation which omits the condensed milk and instead uses a combination of coconut cream and almond milk to make it dairy free.

You'll need

  • 1 ripe medium avocado, pit removed
  • 3/4 cup ice
  • 1/3 cup coconut cream
  • 1 tsp honey (or your choice of natural sweetener)
  • 1/4 to 1/2 cup almond milk

Here's how

  1. Add the avocado, ice, coconut cream, honey and ¼ cup of the almond milk to a blender and puree until smooth and well combined.
  2. Taste and add additional almond milk, depending on the desired consistency.
