Nourishing & Oh So Yum, Fresh Strawberry & Rhubarb Crumble

Craving a good old-fashioned dessert, but living a wholefoods life? Oh wow, me too!

Luckily for us, recently I was full-out wanting some rhubarb crumble, but my mum's version is loaded with brown sugar, refined flour and general not-so-nourishing ingredients. I decided to make a nourished-up version, but wanted it to taste the same! I'll be honest... it was super easy and didn't actually require much creativity! Just swap the unhealthful stuff for more nutrient-dense options and that's it. Tastes AMAZING and totally crushes any cravings for sugar that are hanging around, but won't make you feel like a wholefoods Einstein, damn. Happy Eating!




You'll need

  • 2 large or 3 small punnets of fresh, local Strawberries
  • 2 bunches of local rhubarb
  • A cup or so of filtered water
  • 1-2 tsp of vanilla powder or vanilla essence
  • 1 cup almond meal
  • 1 cup gluten-free oats
  • 1/2 cup of shredded coconut
  • 1/2 cup of coconut sugar
  • 1 Tbs Maca powder
  • 1 Tbs Lucuma Powder (optional)
  • 1 Tbs Cinnamon
  • 100 grams grass-fed, organic butter
  • A few handfuls of crushed nuts of choice would be great in this too!

Here's how

  1. Preheat oven to 180 degrees Celsius.
  2. Line baking dish with parchment paper.
  3. Place strawberries and rhubarb in a pot and cover with filtered water. Add vanilla and bring to the boil. Simmer until soft and thickened.
  4. While Strawberry mixture is cooking create crumble: Mix all dry ingredients in a bowl. Rub butter through mixture until combined and has a sand-like texture.
  5. When strawberry mixture is ready, strain off excess liquid. (save to use in other recipes) Add mixture to tin of choice, I used a loaf tin. Cover completely with crumble mixture and place in oven.
  6. Bake until crumble is golden, roughly 10-15 mins.
  7. Serve hot with organic, local sour cream, cream, or coconut ice-cream. Zo Xxx
