Minty Green Juice

Just a heads up, I make a pretty meaty green juice, it resembles more of a smoothie. Dense, full of goodness and not too sweet.

You'll need

  • 1 bunch of kale. Leaves only, remove the stalks
  • 2 cucumbers
  • 1L young coconut juice
  • 3 celery sticks
  • 1 bunch of spinach
  • 1 green apple
  • 1 bunch of mint

Here's how

  1. Bottle it, refrigerate it, drink it. Yum
  2. Take your blender and pulse through your cucumbers, celery and apple. Add your blanched kale, mint and spinach. The result should be a dense, bitty, bright green liquid. This should already have produced a fair bit of juice but I like to dilute with a litre of coconut juice. This usually gives me green juice for a week!
  3. Boil a pot of water. You need to blanch your kale to breakdown the oxalates in the plant (an inflammatory substance within dark green vege). Once the water is boiling plunge the kale leaves into the pot for a few moments.
